Carrot-Honey Layer Cake ~ #TheCakeSliceBakers

Vegetables are a must on a diet. I suggest carrot cake.


Wow, The Cake Slice Bakers are moving into the final stretch of baking through The Perfect Cake from America's Test Kitchen. This month marks the 9th cake we have baked from the book and, for me, they have all been winners.




As always our choices this month were all winners in the making - Blum’s Coffee Crunch, Carrot-Honey Layer Cake, Smith Island Cake, Cornmeal Cake with Apricot-Bay Compote. You could not go wrong with any one of these cakes, but I chose to make the Carrot-Honey Layer Cake as I knew my family loves carrot cake (well almost all, I have one outlier).




So, if I told you the hardest part of making this cake is grating the carrots, would you believe me?  I need you to trust me on this one as I pick pieces of grated carrot off the wall - boy do those little pieces fly off the grater.  Of course to make it easier you could just use a food processor, but I'm kind of lazy when it comes to washing up, so I stuck with the grater.  After the carrots are grated there are four steps to making this cake - it is that easy.




For me the hardest part was decorating the cake.  The Honey-Cream Cheese Frosting is eat-it-with-a spoon delicious, but it is kind of soft so getting my crumbs to stick to the side was a miraculous feat. It involved a lot of tilting the cake stand and pouring crumbs into my cupped hand so I could get them to stick to the side. Then it was lick crumbs off hand-wash hand well-repeat as I was not wasting any of those precious crumbs. The crumbs I used are actually a product from Australia called Golden Gaytime Crumbs.  The product is actually the coating of an ice cream bar, but people loved them so much that they were developed into a stand-alone item.  Substitutes for these crumbs could be chopped nuts or coarsely ground graham crackers.




America's Test Kitchen has asked us not to publish the recipes for the cakes we bake, and I want to honor that because they have been so amazing to work with, so you can find the recipe for this cake on page 45 of The Perfect Cake. Of course I encourage everyone to run out and purchase the book so that you can have access to all of the amazing recipes.

  4. I wholeheartedly agree with Karen about the crumb blower. This selection was tempting for me and yours looks amazing. This is the perfect time of year for Carrot Cake and I'm looking forward to making it.
