Peaches and Cream Bundt Cake ~ #BundtBakers

my fresh grass, dig your toes into my beaches.

The Bundt Bakers are making Summer Fruits Bundt Cakes this month. So many wonderful fruits to choose from, but I decided to bake with peaches.





This was such an easy cake to put together and it produced a flavorful, moist cake that would be perfect at any get-together, potluck, or picnic.  You could easily sub out the peaches for any fruit of your choice. Actually my only complaint about this cake would be that it would have been even better with a few more pieces of peach in it.

Peaches and Cream Bundt Cake

Ingredients

  • 225g (1 cup) butter, room temperature
  • 420g (3 cups plus 2 tablespoons) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon Penzey's Cake Spice (or cinnamon - optional)
  • 4 peaches, peeled, pitted, and diced small
  • 440g (2¼ cups) sugar
  • 6 large eggs, room temperature
  • 60ml ¼ cup whipping cream
  • 1 cups sour cream
  • 1 teaspoons pure vanilla extract
  • Powdered sugar for decoration


Directions

  • Preheat oven to 180 ℃ (350℉).
  • Butter and flour a 14-cup nonstick Bundt pan. 
  • Whisk together 3 cups flour, baking soda, and Cake Spice.
  • In a large bowl, using a mixer, beat 2 sticks butter and 2 cups sugar on medium-high until fluffy and pale yellow.
  • Beat in eggs, one at a time until incorporated. 
  • With mixer on low, add flour mixture in 2 additions, alternating with sour cream and whipping cream, and beat until combined.
  • Toss peaches with remaining 2 tablespoons flour to coat.
  • Fold peaches and vanilla into batter and transfer to pan., tapping pan firmly on counter several times to remove any air bubbles and smooth top.
  • Bake until a toothpick inserted in center comes out clean, approximately one hour.
  • Transfer pan to a wire rack set over a rimmed baking sheet; let cool 15 minutes.
  • Remove from pan and return to the wire rack to cool completely, then sift powdered sugar over the top.
