The proof is in the pudding ~ or pudding cake in this case.
As the Cake Slice Bakers continue to bake through The Perfect Cake from America's Test Kitchen we fall more and more in love with this cookbook. It was released on March 27, 2018 and has quickly become a favorite amongst bakers. America's Test Kitchen has perfected each of the recipes so you can bake them with the knowledge that they are going to be amazing. #atkcake
As always mise en place is the key to success (and a less messy kitchen when all is said and done). After everything was measured and ready to go, I quickly had the milk and zest steeping and got started on the rest of the recipe. You have to love a cake batter that produces two distinctive layers - a wonderfully soft cake and a creamy pudding.
I can see me making this recipe again and again as everything about it was perfection. The lemon flavor comes through perfectly, and because the zest is only steeped in the milk and then discarded, there is no chance it will affect the texture of the pudding layer. The recipe suggests serving it with a blueberry compote, but I think raspberry would work equally well. This recipe can be found on page 92 of The Perfect Cake.
