Espresso Banana Quick Bread with Espresso Streusel ~ #BreadBakers

Cakes have such a terrible habit of turning out bad just when you especially want them to be good.



The Bread Bakers are making Quick Breads this month. These have always been a favorite of mine as they are both quick and easy, as well as versatile and yummy. I can't really think of a flavor that would not be suited to these gems.




Sometimes cakes do not go to plan and sometimes cakes taste better than they look.  This is one of those times and one of those cakes. This Quick Loaf comes together very quickly and the streusel on top is really what makes it such a delicious cake.  Honestly I'll take streusel over frosting any day.




However I did make a couple of rookie mistakes.  My first one was to use mini chocolate chips and way to many of them, so they kind of overwhelmed the cake - well, that is if you think there is such a thing as too much chocolate. The second was to not bake the cake long enough.  Sometimes it can be hard to make sure a cake is cooked when it comes to both banana and chocolate, as the cake tester tends to come out wet due to the fact that the chocolate has melted and banana is soft. I've made adjustments to the recipe so that you don't experience the same problems that I did.




All in all the flavor of this cake is amazing and the espresso streusel really adds both a wonderful flavor and a delicious textural element.  If you are not a huge fan of the coffee flavor you could leave it out and the streusel would still be a welcome addition on your cake. The nuts are also optional.

Espresso Banana Quick Bread with Espresso Streusel

Ingredients
Cake ~
  • 4 bananas
  • 95g (½ cup) sugar
  • 45g (¼ cup) dark brown sugar, firmly packed
  • 115g (½ cup) unsalted butter, softened
  • 60ml (¼ cup) whole milk
  • 1 large egg
  • 200g (1½ cups) all-purpose flour
  • 1 teaspoon instant espresso powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 175g (1 cup) semisweet chocolate chips
  • 100g (1 cup) walnuts, lightly toasted
Streusel ~
  • 50g (¼ cup) brown sugar
  • 50g (6 tablespoons) all-purpose flour
  • 1 teaspoon espresso powder
  • 40g (2 tablespoons) butter, cubed

Preparation
Cake ~
  1. Make streusel topping; set aside.
  2. Preheat oven to 180 ℃ (350 ℉)
  3. Spray a 13.5cm x 23.5cm (5"x9") loaf pan with baking spray.
  4. In the bowl of a stand mixer fitted with the paddle attachment, add the bananas, both sugars, egg, milk and butter and beat until smooth.
  5. In a separate bowl, stir together flour, espresso powder, salt, and baking soda.
  6. While mixer is running at the lowest speed, slowly add dry ingredients, mixing until just combined.
  7. Using a spatula, fold in chocolate chips and walnuts.
  8. Pour batter into the loaf pan and sprinkle the streusel evenly over the top.
  9. Bake on center rack 45-50 minutes, until a cake tester inserted in center comes out clean.
  10. Remove pan from oven and let cool 15 minutes before turning loaves out onto a wire rack.
  11. Allow to cool for at least 30 minutes before slicing.
Streusel ~
  1. In a bowl, add brown sugar, flour, and espresso powder,.
  2. Add butter and, using your fingers or a fork, mix ingredients until pea-sized clumps form; set aside.

  1. First, I don't think there's such a thing as too much chocolate. Second, a quick toast takes care of a slightly under baked slice of a quick bread. I'd eat this for sure!

  3. It looks fabulous, you'd never know about any mistakes! I think, didn't Julia Child say never to apologize or explain about your cooking? I'd love to sample your bread. I love a streusel topping too! :)

  4. I love coffee cakes as I love the aroma and the flavour of coffee. The cake looks beautiful and I would love to dig in that streusal topping.

  5. This is an adorable bake. I have also gone overboard with choco chips in my cakes and got the tester wet with chocolate. The streusel topping looks delicious. The melt in the mouth slices look yum!
