White Chocolate Mud Bundt Cake ~ #BundtBakers

If you grew up making mud pies, it is now time to make a mud cake.


The Bundt Bakers are making White Cakes this month.  Mud cakes have always been much-loved in Australia, and I brought that love with me to the US.  A Mud Cake is a rich, decadent, dense cake that is perfect for birthdays, celebrations, or even just because it's been one of those weeks and you need a sweet treat.




This cake is usually made in a square or round cake pan, but I couldn't see any reason why it could not be made in a bundt pan. It turns out that I actually prefer it as a bundt because I can control the amount of frosting much better in this type of pan.  Beside having a beautiful exterior due to the shape of the bundt pan, the design of the pan allows more of the cake batter to reach the surface of the pan than using a square or round pan, which helps in providing much faster and even heat distribution during baking, so this cake bakes quicker than a conventional mud cake.




As you are probably aware white chocolate is not actually chocolate in the conventional sense. It contains sugar, milk, cocoa butter, and lecithin but no cocoa solids.  It is quite sweet and just perfect in this cake. To balance out the sweetness a little bit I used a lot of lime in the frosting and decorated with blackberries.




This bundt could not be any more simple to make, and from the base recipe you could incorporate so many different flavors in both the cake and the frosting. The only change I would probably make next time is to cut the sugar down.  The younger me would have loved this level of sweetness, but the older me says lets make smart choices . ;)

White Chocolate Mud Bundt Cake

Ingredients
Cake ~
  • 400g (14oz) butter, chopped
  • 500g (17.5 oz) white chocolate, chopped
  • 400ml (14 oz) water
  • 440g (15.5 oz) sugar
  • 10ml (2 teaspoons) vanilla extract
  • 4 eggs, lightly beaten
  • 250g (9 oz) all-purpose flour, sifted
  • 250g (9 oz) self rising flour, sifted

Lime Cream Cheese Frosting ~
  • 240g (2 cups) powdered sugar
  • 120g (½ cup) cream cheese
  • 45ml (3 tablespoons) fresh lime juice
  • zest of one lime, divided

Preparation
Cake ~
  1. Preheat oven to 150℃ (330℉).
  2. Spray bundt pan with baking spray .
  3. Combine butter, chocolate and 400ml (14 oz) water in a large heatproof, microwave-safe bowl.
  4. Microwave, uncovered, on HIGH (100%) for 3 to 4 minutes, stirring every minute with a metal spoon, or until smooth.
  5. Add sugar and vanilla to chocolate mixture, stirring to combine.
  6. Add egg and mix well.
  7. Sift flours together over chocolate mixture, stirring until well combined.
  8. Pour mixture into prepared pan and bake for approximately 1 hour 30 minutes or until a skewer inserted into the centre has moist crumbs clinging.
  9. Allow to cool completely in pan for 30 minutes and then carefully turn cake out.

Lime Cream Cheese Frosting ~
  1. Sift powdered sugar into a medium size bowl.
  2. Add cream cheese, lime juice, and half of the lime zest.
  3. Using a hand mixer beat until mixture is smooth.
  4. Pour over cooled bundt cake and decorate with remaining lime zest.

  2. I've heard of mud cakes but as of yet, haven't had the pleasure of baking one. Thank you for convincing me that I should bake one soon.
