Bananas Foster Cake ~ #TheCakeSliceBakers

This year The Cake Slice Bakers will be baking through The Perfect Cake! So far it is proving to be the perfect book for our group. This book has so many wonderful recipes in in and it gives a breakdown of why the recipe works, and since it is from America's Test Kitchen you know that these recipes have passed the test. There are a few steps to this cake but don't let this dissuade you from making this delicious treat. If it seems too daunting, just break up the components.  You could make the cakes on day one and wrap them in plastic wrap and store them in the refrigerator.  Then on day two you could make the bananas foster filling and the buttercream.  Simply allow the cakes to come to room temperature whilst you are making the other components and then assemble. Of course it can definitely be made in one day too, as I started this cake around 10:00 am and we were enjoying it by around 2:15 pm. Yeah, we couldn't wait to try a slice.




The only changes I made to the original recipe were to add a thin layer of the buttercream to the layers of the cake and I added some pre-made praline crunch to the base and sprinkled some over the top.  As I wanted to pipe some of the buttercream, I also added a little extra powdered sugar to the frosting mix so that it would stretch a little further.




This cake was delicious, but I do wish that there had been more caramel with the bananas foster, so I would suggest making double the amount of caramel.  You don't have to use it all in the layers, just keep any excess to pour over the slices as you cut them.
