Move your ice cream from the bowl to the bundt pan and enjoy this easy-to-make cake.
Have you ever made a 5-Ingredient or less cake? When you think about all of the usual ingredients that go into a cake - butter, sugar, flour, eggs, milk, vanilla - it was a little difficult to think outside the box. Then I remembered a recipe that used melted ice cream in a cake.
This Melted Ice Cream Bundt Cake has only three ingredients - a boxed cake mix, ice cream, and eggs. As you can imagine this cake was super easy to put together and I wondered how good something so easy would taste. I need not have worried at all - it was delicious!
It was amazingly tender and had a wonderful vanilla flavor from the vanilla bean ice cream. This is the perfect cake when you have unexpected guests or if you are just craving something sweet. To speed up the melting of the ice cream I just put it in the microwave for a couple of minutes. Also, since any flavor of ice cream works in this cake, I am looking forward to trying coffee next.

Ingredients
Cake ~
- 1 box white cake mix
- 1 pint melted ice cream (any flavor), measured the after it has melted
- 3 eggs
- 1 cup confectioner’s sugar
- 2 tablespoons milk
Preparation
Cake ~
- Preheat oven to 350℉.
- Spray bundt pan with nonstick cooking spray.
- Combine cake mix with eggs and melted ice cream in a large bowl, and using a hand mixer beat until well combined.
- Pour batter into prepared bundt pan.
- Bake for about 40-45 minutes, until the cake springs back to the touch and a cake tester comes out clean.
- Allow cake to cool completely then turn cake out onto a serving plate.
